Fermented Dairy
This week, you will make your kefir, yoghurt, and crème fraiche from your A2 raw milk. We ferment yoghurt and kefir for 24 hours or until the whey breaks, which is the separation process. You will see a line of liquid in the midst of the creamy dairy. It may appear yellow or more white, but it will be a translucent liquid in the midst of the opaque dairy. This is the process of forming curds and whey. Cultured cream, crème fraiche, sour cream, and kefir cream are all similar. Kefir cream is made with kefir as a starter and has the most microbial power, and sour cream is made with yoghurt as a starter. Cultured cream can be either wild, clabber cultured, or started with yoghurt or kefir. The cream will be fermented for 1-3 days — or until it is as thick as you like — no matter the starter/culture. A 24-hour cream will be more liquid whereas a 3-day ferment will be quite thick. All dairy will ferment faster in a warmer environment and slower in a colder one, you will gain a rhythm and find your perfect timing. Your dairy may ferment thinner at times — there are variances, it is never wrong!
You may move your fermented dairy to the fridge after it is fermented. This will slow down the fermentation process. Please note that cold foods are not good for digestion and therefore should come to room temperature before consuming. Raw dairy will neither go bad nor spoil. It will, however, sour or clabber. You may not find this palatable, but there is nothing wrong with it. In fact, this is how many people preserved their milk before refrigeration.
Recipes: Kefir, Yoghurt, Sour Cream
If you are already making fermented dairy, allow the curds and whey to separate and isolate some whey to keep in your fridge. You will use a teaspoon of this in all plant ferments which you will use on your scalp daily.
Whey is also very useful for stopping loose stools. And if you find that you love drinking it, listen to you body and give it as much as it needs.
Food Intolerances and Anaphylaxis
If you are lactose intolerant, you will still need to make the fermented dairy. The lactose will no longer be present in the fermented dairy and the casein will be broken down into paracasein. Begin by using directions for Reversing Food Intolerances.
If you have an anaphylactic reaction to dairy, you will not attempt to use dairy until two years on the protocol and you must work with a practitioner. If you are anaphylactic, you can make fermented coconut milk as it has similar microbial communities to kefir. If you are simply intolerant, you will still make and use the dairy.
Fermented Coconut Milk
- Ingredients:
- 1 can full-fat coconut milk (or use fresh)
- 1 capsule of a dairy free probiotic
- Directions:
- Pour the coconut milk into a clean quart jar
- Empty the probiotic capsule into the milk
- Stir gently
- Cover with a breathable cloth and ferment at room temperature for 24 to 48 hours, tasting along the way until it reaches the tang you like.
Beauty Products
You will begin to toss and replace beauty products this week.
- Shampoo=egg yolks
- Conditioner=cup of water with teaspoon of ACV
- Make-up=make your own using food/edible ingredients (look at YouTube for recipes or Kat James’ book the Truth About Beauty

Ask any company you may want to purchase from if they use all edible ingredients. Remember: If you cannot eat it, do not put it on your skin. When our fermented dairy is ready, we will use it on the scalp (strained whey is best for this) and skin everyday. We will also use it in the mucous membranes (rub on eyelids…do not place in eyes). And before sleep, add kefir or fermented cream to our silicone mouth guard. Reviv is a good brand. If you are a mouth breather, please begin mouth taping. The purpose of this is to allow the microbiome (of your skin, eyes, nasal cavities, etc.) to replenish which is necessary for overall health.
Do not use commercial toothpaste or mouthwash. This depletes the microbiome of the mouth and causes dental and health issues. Toothpaste is unnecessary; you can use coconut or olive oil, to which you can add a bit of activated charcoal or bentonite clay. You can also add in Blis Probiotics M-18 and K-12, using 1/4 lozenge a few times per day and before bed to restore your oral microbiome. There are also toothpastes on the market now for supporting the oral microbiome. Research ingredients. Swish two times per day with fermented dairy or fermented vegetable juice if not yet doing dairy. Use silk floss and a wooden toothbrush with boar hair.
Buy a traditional, homemade lye and fat soap (tallow, goat milk, etc.) that is free of fragrance and dyes. We do not need to soap our whole bodies. The nutrients will begin to balance our scent and detox baths are enough to get us clean. The microbiome of the skin does not rely on chemicals of any kind. Deodorant will not always be needed. After a time on the protocol, you will only stink if you are experiencing die-off or you get into a sympathetic nervous system state. You can use apple cider vinegar for deodorant.
Try not to get overwhelmed. Change out products out as you are able. The big things to remove are the chemicals in the bath water and the drinking water (fluoride, chlorine), fragrance, and anything else with scents or chemicals.
Morning Routine
We will build our morning routine over the next week. Your morning routine is not an option.
Your nervous system and hormones do not want to make decisions in the morning. Your nervous system — and consequently your hormones — can become imbalanced if your mornings are always different. If you can only make an hour for yourself, then do that. Your children can absolutely experience your morning routine with you but do not have to. Your morning routine should include gentle movement, sun (no blue lights), gratitude, meditation, sound, connecting to the body, and cold exposure. Eating Window
It is time to change your eating window to 10AM-3PM. Your first meal of the day needs to be savory with plenty of mineral salt, and with as much fat and protein and you can eat!1 Keep your second meal open for sweeter things and vegetables. Remember that breakfast is just the meal of the day when you are breaking your overnight fast. Our body needs nutrients for our break-fast! It has been working hard to clean all the systems during our overnight paralysis. Sleep is not just rest; it is a very active time for the body! Reward it and appreciate it with a breakfast from our meal plan.
Slow down greatly on the fat bombs or butter buttons, and see how your blood sugar is doing. Remove them if possible and use the egg nog or cheesecake mousse at this time.
